GARDEN-GARBANZO BEAN SALAD
I love to make this recipe using fresh ingredients from my garden. I have had a lot of yellow pear and grape tomatoes and always tons of herbs. I also just had our first garden cucumber! LUKE'S NO BAKE COOKIES
Ingredients:
• 1-1/2 cup rolled oats • 1/2 cup peanut butter or almond butter • 1/4 cup honey or maple syrup • 1/2 cup unsweetened shredded coconut • 2 tbsp. ground flaxseed • 1/2 cup mini chocolate chips • 1/2 cup raisins Directions: 1. In a large bowl, add all of the ingredients and stir until evenly combined. The mixture should be a little sticky. 2. Scoop a tablespoon of the mixture and roll into firmly packed balls. 3. Store in an airtight container and keep refrigerated for up to a week.
